Where We Get Our Coffee Beans and Why It Matters

At Everette's Fresh Roast Coffee, we believe that exceptional coffee begins with exceptional sourcing. Our dedication to creating high-quality, blended roasts takes us on a journey across continents to bring you the finest beans from Colombia, Mexico, Guatemala and Ethiopia. Each region contributes unique flavors and characteristics that make our blends truly special.


We don’t make these decisions lightly, either. As a family-owned, small-batch roaster, providing our customers with unique yet approachable flavors is integral to our mission. Read on to learn a little more about each region and why we take so much care when selecting our beans!

Colombia 🇨🇴


Colombia is primarily known for its Arabica beans, which are prized for their high quality and complex flavor profiles relative to Robusta beans. Arabica beans are grown at higher altitudes between 4,000 and 6,500 feet above sea level.


Every roast at Everette’s Coffee uses Colombian coffee beans. We don’t play favorites here, but if we did, Colombia might be in the running! The excellent quality, great taste and ability to mix with beans from other areas of the world makes it a fine choice for the blends we like to create.


We source our caffeinated Colombian beans from Huila, which gives the coffee a more fruity undertone compared to other areas of the country. Different microclimates and soil variations will give beans produced in the same country different qualities, and this is one we’ve really come to appreciate. Our new Daydream Decaf Roast uses decaffeinated beans from Caldas, and we're very happy with the result thus far.


Mexico 🇲🇽


Mexico’s coffee-growing regions are primarily located in the southern states, such as Chiapas, Oaxaca, Veracruz and Puebla. These areas are known for having mountainous terrains and tropical climates, providing ideal conditions for coffee cultivation.


We primarily source Mexican coffee beans from Chiapas and Veracruz because of the classic coffee flavor profile you get from them – a little bit chocolaty and nutty with balanced acidity. Our popular medium roast, Cozy Casa, combines Mexican and Colombian beans for a balanced blend that includes a flavor profile bursting with mild citrus, toffee, almond and dark chocolate.


Guatemala 🇬🇹


Guatemala's volcanic soil and high altitudes contribute to its reputation for producing some of the world's best coffee, and it’s one of the top coffee producers in Central America.


Here at Everette’s Coffee, we really like the more earthy, subdued flavors that come from Guatemalan beans, and we like getting our beans from near Huehuetenango. Our flavorful light roast, Sunbean, combines Guatemalan and Colombian beans, perfect for an early morning boost or a late night pick me up.


Ethiopia 🇪🇹


Ethiopia, coined “The Birthplace of Coffee” due to the legend of its discovery by a goat herder named Kaldi in the 9th century, offers a remarkable range of beans with unique and complex flavors. Ethiopia is the largest coffee producer in Africa, and coffee is a vital part of its economy and culture.


From Ethiopia, we look for beans with flowery or fruity characteristics, so we like Guji coffee beans from the Oromia region. Our bold dark roast, Sandrolini, named after our maternal grandfather’s family, features a blend of Ethiopian and Colombian beans that brings forth notes of milk chocolate, red fruit, caramel and a hint of floral.
